Jerusalem Artichoke – Chervil Soup

2 cups White Beans
4 Cups Jerusalem Artichokes
1 Large Bulb Garlic (or more)
2/3 Cup Chervil
2 Tbsp Rosemary
5 Cups Water
Fresh Cracked Pepper
Salt to taste

Combine White Beans and Water, bring to a boil and reduce to a simmer, simmer 5 minutes, cover and let sit for 1 hour.

After 1 hour, return beans and water to a boil and reduce to simmer for 1 hour. Add the Jerusalem Artichokes and garlic. Add the rosemary. When the soup is almost done, add the chervil. Add fresh cracked pepper and salt to taste.
